WW #42: Arroz Caldo / Chicken Congee
I made arroz caldo last Sunday for dinner. Arroz caldo is a Spanish term which literally means “rice soup” and is the Filipino version of the Chinese congee. A complete meal in itself, it is one of my favorite comfort foods and is perfect for cold weather.

This looks waaaaay better than my first arroz caldo, which looked like sticky rice pudding…

It is the first time I see chicken congee with hard-boiled eggs in there.
