Hi Dee! Thank you for your email. I've been trying to figure out what went wrong. This has been my "go-to" chocolate cake recipe for some time now. I don't consider myself a baking expert but let me share with you a few basic things I try very hard to remember whenever I'm baking cakes: 1) Do not over/under mix the cake batter; 2) Do not open the oven door until the minimum bake time has elapsed; 3) When the cake has cooled, say after an hour, and I'm not going to frost it yet, I cover the cake layers with plastic wrap.

I'm really at wit's end trying to find an answer because I would like for your cake to come out right...specially, since you've already done the recipe thrice. This is the exact same recipe I've been using. I'm thinking it's a toss up between overbeating the batter and the bake time. Ovens behave differently from each other. I've experienced quite a number of baking disasters following the bake time in certain recipes when my oven actually needed less time than what's called for in the recipe. And don't be tempted to open that oven door until the minimum bake time has elapsed.

Here's a site you might want to check out which I find very helpful: http://www.theeveninginn.com/recipearticledisplay.aspx?article=77&name=Making%20Cakes

Good luck, Dee! I hope you don't give up on this recipe! :)

[...] Chocolate is THE ULTIMATE comfort food for me. Blame it on my mother! (I love you , Mommy!) Hee hee! Chocolate bars, ice cream, cakes, drinks, practically chocolate in all shapes, sizes and forms. Growing up, my favorite chocolate cake was Cafe Elysee’s (remember this coffee shop found at SM branches all over?) chocolate mousse. If you look at my pantry, I have a stash of chocolate products…candy bars for snacking, chocolate chips and cocoa powder for baking.
