Now, to answer your question, if, as you say, you&#039;ve got everything almost right, the only reason I can think of as to why the syrup tastes bitter is you&#039;re probably overcooking it.  I would suggest cooking the syrup at a shorter time than you normally do or giving the syrup a taste every now and then. Just be very careful as the syrup is very very hot! So be sure to let it cool a little before tasting it! :)
