Birthday Cake for a Dear Friend

One of my dearest friends, someone I’ve known since we were in pigtails, celebrated her birthday last week. I made her my most favorite cake to make, which she happens to really like a lot, Mocha Chiffon with Creme Chantilly.

I’ve made this cake so many times but no two are ever alike. :)  This is a 10-inch round cake and is about 4.5 inches high.  It is quite big, I must say. Hee hee.  It is moist.  It is soft and fluffy.  It is just plain good.

The cake was topped with slices of fresh strawberries and fresh mangoes and Hershey’s Special Dark Chocolate shavings.  While very rich cakes leave one thinking about weight loss pills that work , the very light creme chantilly and the fresh fruit slices on this cake leave very little room for a guilty conscience after indulging in a generous slice of cake.  Fresh fruits equals healthy eating, right? Right. :D

    Oh wow, I think my heart skipped a beat when I saw the cake… The shredded chocolate scattered between generous slices of strawberries and mango and the white icing is just angelic. I wish I had a friend like you :D

    I love using fruits as cake decorations. They’re pretty in themselves and much healthier alternative to candies, sprinkles and all the other sugary stuff. But, I love my chocolates, too, which go very well with strawberries. ;)
