I know Halloween is so 10 days ago, so bear with me as I get another one of my long overdue entries out of the way.
I baked and decorated over 7 dozen cupcakes on Halloween weekend. Half of them were Vanilla Chiffon while the other half were Sugar Yam cupcakes.
Here are the Vanilla Chiffon cupcakes I made for my daughter’s class…
I sent hubby to the nearest store at the last minute to find me the cutest cupcake toppers. He ended up at CVS where he found marshmallow ghosts and pumpkins.
Half the cupcakes were topped with the white ghosts. The other half were topped with the pumpkins. These cupcakes were a huge hit with my daughter’s class. Some of them were even asking for seconds. Hee hee. Love those kids! ;)

I made Sugar Yam cupcakes, which I’ve always thought would be perfect for Halloween if I topped them with purple Italian meringue buttercream frosting and macapuno (sweet coconut strings) that has been mixed with a bit of black gel food color. I was right. ;) I also sprinkled some cake sparkles on the frosting.
For the kids, I made another batch of Vanilla Chiffon cupcakes, which were frosted with Italian meringue buttercream and topped with a black gumpaste cat.
I was very pleased with the cupcakes I came up with and how very well they were received. ;) They seemed to have put the “wee” in our halloween. Hee hee, gastronomically speaking. :D It was a challenge not to reach for another cupcake…and another…and another. But if I did that, I’d end up reaching for copies of lipofuze reviews the very first chance I got!
We are already looking forward to next year’s Halloween festivities!
