go figure. I'll crawling the web looking for a recipe where I can use up some duck egg yolks and I not only find a flan (I adore flan!) but the author says "if only I could find fresh ducks eggs!"

we raise our own. my two khaki campbell ducks produce a solid dozen eggs a week for us. they are easy to care for and nothing beats ducks' eggs for recipes. we just added 6 new ducklings to our flock (we also have ten hens). hurray, more duck eggs!

btw, I make lemon meringues with the whites. I love little meringue "cookies" and love lemon meringue pie but didn't have everything for pie :)

Can i just bake it with just simmering water in the bain marie? Will 30 minutes suffice? I'm talking about not knowing if it's already 350F and i have no plans of buying a thermometer. How about putting the mold in the steamer? Do you think it would yield the same results?

Hi Alma! I am sorry to hear that you had problems with the puto. You said you baked the puto. Did you do it in a water bath in the oven? Did you use puto molds? I really can't think of where you went wrong when you followed the steps exactly. Puto should take as little as 15 to 20 minutes to cook in a steamer. The only time it took me over 30 minutes to steam puto was when I used an 8" cake pan (just like my grandma used to do). I actually prefer to use thick coconut milk or coconut cream. Do let me know the ending of your puto adventure when you have time. :) Thanks for dropping by!
